Per me rappresenta la primavera, perchè la preparo sempre appena comincia la stagione degli asparagi, quindi in primavera.
Ingredienti: (per 10 persone)
300 g di farina 00
1 kg di asparagi verdi
500 g di besciamella (50g farina 00, 50 g burro, ½ l di latte)
6 uova
200 g di parmigiano grattugiato
150 ml di olio e.v.o.
Sale e pepe nero
Procedimento:
Pulite gli asparagi (tenetene da parte 5 crudi per decorare la torta) e cuoceteli al vapore per 20 min, poi frullateli e divideteli in due parti.
Versate sul piano di lavoro la farina, aggiungete 100 ml di olio, una parte degli asparagi tritati e impastate fino ad ottenere una palla liscia, morbida ed elastica. Lasciate riposare al fresco almeno 30 min coperta da un canovaccio.
Preriscaldate il forno a 180°.
Versate il trito di asparagi rimasto in una ciotola, unite la besciamella, le uova, il parmigiano, salate, pepate e mescolate gli ingredienti.
Tirate la pasta in un disco spesso ½ cm.
Ungete una teglia di diam. 30 cm con un velo d’olio e rivestitela con la pasta. Versate la farcitura, ripiegate la pasta in eccesso verso l’interno sulla farcitura, decorate la sommità con gli asparagi e infornate la torta per 1 h.
Prima di trasferire la torta su un piatto, fatela riposare 10 min nella teglia.
Servite calda o tiepida.
